so while at work today i receive an email from katrina titled, “chocolate ganache-stuffed cookies.” it’s only 1:00, i wont be home for another 4 hours. i wasn’t sure whether to open the email and have to think about the cookies the rest of the day. but i did. and omg. the picture is mouth watering. see for yourself…
a warning: do not double the recipe!! they looked so good, i thought i might as well make enough to share… let me tell you. one batch: enough to share.
hint: for assembly i found it much easier to make a ball out of the dough. stick the end of a wooden spoon (or some other rounded, cylinder object), into the ball. fill with ganache (which i put into a zip lock bag, snipped the end, and piped out nicely). then get a small sheet of the dough and place it over the ganache filled ball.
you will not be disappointed. promise.
2 cooked chicken breats, cubed
1/2 can of salsa
2 peppers, sliced (red, orange, yellow — whatever you prefer)
1 can of corn
1 tbsp. oil
cook peppers in oil in skillet. add chicken breasts, salsa, and corn. cook in skillet for about 10 minutes on low heat, until everything it warmed.
i made today’s dinner fairly quickly. aside from the fact that i left my wallet at home when i went shopping for ingredients. luckily i went to the sobey’s that was 3 minutes away and not the superstore that was 15 minutes away.
what you need:
about 18 dried jumbo shells
ground something (beef, turkey, chicken)
1 package cream cheese, cut up
1/2 a jar of salsa
1/2 cup shredded cheese
boil shells according to box. cook ground meat until cooked. once the meat is cooked, add about a tsp of chili powder and the cream cheese. mix until the cream cheese is melted in.
stuff the meat into the shells. top with salsa. cook at 350 for about 15 minutes, covered.
sprinkle with shredded cheese. cook for another 15 minutes, uncovered.
marinate chicken for 1 hour in: 8 tbsp. olive oil. 2 tsp. lemon juice. 1 tbsp. dried oregano. 4 cloves crushed garlic.
stuff chicken breast with feta cheese.
wrap in bacon.
secure with toothpicks.
bake at 450 for about 30 minutes.
